  1. Place arugula, brussel sprouts, fennel, apple, onion, and dried cherries in a large mixing bowl. Sprinkle with a little salt and pepper. Set aside.
  2. In another bowl, whisk together the olive oil, Dijon, vinegar, rosemary, and lemon until well combined. Pour over the arugula mix and toss. Taste for seasoning. Sprinkle with goat cheese and serve.
